This week, we raise a glass (responsibly, of course!) to honor one of Mexico's most iconic and ancient spirits: Mezcal.

Celebrated on October 20th, this day is about far more than just a drink. It’s a tribute to centuries of tradition, a celebration of the maestros mezcaleros who pass down their craft through generations, and a recognition of the deep cultural heritage distilled into every bottle. From its pre-Hispanic origins as a sacred beverage to the vibrant folklore that surrounds it, mezcal is a true liquid treasure.
Our Commitment: Beyond the Tradition

Reducing the Footprint of a Legendary Spirit
Our work centers on two critical areas:
Tackling the CO2 Footprint: Traditional mezcal production is energy-intensive, often relying on wood for roasting the agave, which contributes to deforestation. We're actively consulting on projects to:
Implement renewable energy sources like solar panels to power distilleries.
Convert agave waste (bagazo) into biogas, creating a clean, circular fuel source.
Develop large-scale reforestation and agroforestry programs, where agave is planted alongside other crops. This restores biodiversity, protects vital pollinators like bats, and captures carbon in the soil.
Protecting Every Drop of Water: Mezcal production has a significant water footprint. It can take up to 10 liters of water to produce just one liter of mezcal. We are helping producers innovate by:
Engineering systems to treat and reuse wastewater (vinaza) for irrigation, turning a potent pollutant into a valuable resource.
Implementing rainwater harvesting systems to capture and store water.
Developing new uses for fibrous waste, such as creating compost or construction materials, which reduces landfill and protects groundwater.
